Lunch Box Favourites - Feijoa Muffins
Feijoa Muffins Recipe
These are super easy and taste even better when made together with family.
Ingredients
1.5 cups sugar (can be reduced if you like them tart)
1 cup oil
2 eggs
1 tbs vanilla
3 cups of flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
3 cups feijoas (about 20)
Topping
Brown sugar and cinnamon to sprinkle on top
Method
Heat the oven to 175 degrees
Mash the feijoas, or blend if you don't want any chunks.
Cream the sugar and oil, add eggs and vanilla (2 mins), add this to flour, salt, cinnamon and baking soda. Mix until just combined and add the mashed feijoas.
Fill the muffin tins 3/4 full and bake for 20-25 mins.
Cool on a wire rack and enjoy together!
If you have an egg allergy in the home like we do here are a few egg subsitute options for you:
- you can use 1/2 cup of applesauce
- omit all together and add an extra feijoa
- substitute with chia eggs. To make use 1 tbsp chia seeds + 2.5 tbsp water, let sit until chia seeds expand. For this recipe you would double this to make two chia eggs.
